Spice Grinds Explained: Whole, Cracked, Coarse & Fine
The same spice behaves very differently depending on how it is ground. Choosing the right cut, and grinding close to use, is one of the easiest ways to get more flavor out of every pound.

The grind spectrum
Whole keeps the most aroma and the longest shelf life, ideal for infusing, toasting, or grinding to order. Cracked and coarse grinds add visible texture and a burst of flavor, great for rubs, brines, and finishing. Table and fine grinds distribute evenly through batters, sauces, and blends.
Why milling to spec matters
Particle size changes extraction: a finer grind releases flavor faster and more intensely, a coarser grind more slowly. For a consistent product, you want the same cut every batch, which is why we mill to your mesh or particle spec order to order rather than shipping a one-size grind. For fine grinds and powders we mill and sift so the particle size stays even.
Grind fresh, store whole
Ground spice loses aroma faster than whole because more surface area is exposed to air. Where you can, buy whole and grind close to use, or order smaller, more frequent batches of pre-ground so it never sits long enough to fade.
