Ceylon Cinnamon
4.73 reviewsTrue Ceylon cinnamon from Sri Lanka, delicate and complex where cassia is bold. Thin, brittle quills with bright citrus and floral notes, ideal for desserts, teas, and dishes that want cinnamon's nuance rather than its bite.

Delicate, exactly what Ceylon should be
Soft, layered quills that crumble between your fingers. Floral and mild, perfect for custards and rice pudding where cassia would bulldoze everything. True cinnamon, not cassia.

Our customers specifically want true Ceylon for the low coumarin, and we need to be able to say where it comes from. Sri Lankan origin and grade documentation are on the invoice. Reordered twice.

Lovely and mild. I grind the quills in a coffee grinder for oatmeal. It's subtle compared to Saigon, which is the point, but know what you're buying.
