Black Pepper

4.89 reviews

Organic Kampot pepper from Cambodia's protected growing region, prized for unusually large, intensely aromatic corns and a delicate, almost fruity heat. A connoisseur's peppercorn for when the pepper itself is the point.

Frequently asked

Is your black pepper single-origin?
Yes. It traces to partner farms in Quang Tri and Da Lat, Vietnam (and Dak Nong for the organic line), never blended across regions.
What grinds can I order?
Whole, fine, coarse, butcher's, restaurant, and powder grinds, milled to spec order to order. For fine grinds and powders we mill and sift to an even particle size.
How is it different from supermarket pepper?
It is bought close to harvest and ground to order so it holds the floral, citrusy aromatics that pre-ground commodity pepper loses sitting in warehouses.

Finally, pepper that tastes like something

We switched our whole line from a broadline distributor to the Brilliant Black in 40 lb boxes. The aroma when you open the box is the first thing the cooks noticed. Bright, almost citrusy, real heat. Our steak au poivre is a different dish now.

    Consistent lot to lot

We've bought six boxes over the past year and the color and moisture have been the same every time, which matters when you grind and blend at scale. COA arrives with the shipment without asking.

The butcher's grind is exactly the particle size we want for our rubs. No dust, no huge chunks. Ordered Monday, on the dock Wednesday.

Late Harvest is worth every dollar

I use the Late Harvest in a strawberry and black pepper sorbet and it reads as fruit, not spice. Guests ask what it is every night. Buying the 4 lb box is plenty for a season of desserts.
